When life gives me lemons, I make Lemon-Blueberry Chiffon Cake.
It’s the summer now. The weather’s getting warmer, the clothes are getting shorter, and the fruits are getting sweeter. One of my favorite things to eat, in the world, are summer fruits. Mangoes, lemons, pineapples, the list is endless. The best thing is coming from a hot day, and engulfing a large bowl of fresh, cold fruit.
Lemons and blueberries are one of my favorite combinations on the entire planet. The tart, sour taste of the lemon is brightened and complimented with the sweetness of the blueberry. And, the yellow and blue color of both fruits is such a cheerful and happy combination. I mean, how can you not be in a lively mood with blue and yellow?
This is literally the easiest cake recipe/baking recipe you shall ever find on the planet. It yields wonderful, moist, perfectly sized chocolate cupcakes every time. I can whip this up in about 20 minutes or less, cleanup time included. All you need is one bowl, and one whisk, no fancy equipment, to make these delicious sweets. What I love is that they’re not to sweet, and they still have the deep flavor of chocolate in them, which is truly the mark of a chocolate cupcake. And best of all, they’re MOIST. My favorite frosting on this whole wide world is classic Vanilla Buttercream. I love how it has a remiscent taste of vanilla ice cream, and its smooth and creamy texture. But, not all Vanilla Buttercreams are made the same, no no no. Store bought Vanilla Buttercream? That “stuff” should be made illegal. Vanilla Buttercream from a cupcakery? Too sweet and gritty.
